Campfire Peach Berry Cobbler

Did you know August was National Peach Month? 
What you'll need:
The filling:
  • 3C sliced peaches (if using frozen peaches, thaw and drain first)
  • 2C. raspberries
  • 1C blackberries
  • 3/4C granulated sugar
  • 3 Tbsp cornstarch
  • Juice and zest of 1/2 lemon
  • 1 tsp pure vanilla extract
  • Pinch kosher salt
The topping:
  • 1C all-purpose flour
  • 2 Tbsp granulated sugar, plus more for topping
  • 2 tsp baking powder
  • 1/4 tsp kosher salt
  • 1/2C butter, cold, cut into 1/2" pieces
  • 1/2C buttermilk
  • 1 tsp pure vanilla extract
  • Vanilla ice cream (for serving)

How you'll do it:

  1. Place a grate placed over a campfire. (Or preheat grill to medium heat.) 
  2. In a mixing bowl, toss together filling ingredients then pour to a large cast iron skillet.
  3. In a medium bowl whisk together flour, sugar, baking powder, and salt. Add butter and use your hands to mix together until butter pieces are roughly the size of peas. Add buttermilk and vanilla and stir until just combined. 
  4. Spoon mixture on top of fruit and sprinkle with more sugar.
  5. Cover skillet with a lid or with foil. 
  6. Place over campfire (or grill) and let cook until biscuit mixture is cooked through and fruit is bubbling, about 20 minutes.
