Six Recipes For Summer

Well we’re in the midst of summer here in New England, and while we may be missing many of the events and gatherings we look forward to  this time of year, there are still several elements of the season we can still enjoy. We thought we’d share some of our favorite recipes highlighting some of our favorite things about summer.

First, after our long winters, summer is all about being outside. This could be out in nature, or as simple as just enjoying your backyard. That’s why we love firing up the grill every chance we get. While there’s lots you can grill up, we thought we’d share a couple uniquely Vermont recipes. What makes them uniquely Vermont? Maple syrup of course! First, our recipe for Homemade Maple BBQ Sauce!  There's a variety ways to season homemade BBQ sauce depending upon what you like, but we wanted it to have a little spice, but have a slightly sweet finish. So we put a Vermont twist on it by adding Maple Syrup. Easy to make and delicious, its versatile and can go on just about anything you’re grilling up! Similarly, check out our recipe for Grilled Smoked Maple Salmon. We used Sugar Bob’s Smoked Maple Syrup to create a sweet and smokey marinade for salmon! Not in the mood for fish? The marinade would work great on chicken as well!

Another of our favorite summer pastimes is gardening. Few things are better than veggies pulled straight from your very own garden, and it seems with the extra time folks have had at home gardening is increasing in popularity. One recipe we love as a side to whatever we’re throwing on the grill is Zucchini & Cherry Tomato Crisp. This recipe is simple and bursting with fresh, garden flavor! If your garden is like ours, you’ll still have a lot of cherry tomatoes left over even after making that, so throw them in a Summer Quinoa Salad! This recipe is versatile and you can substitute what you have in your garden, depending on your tastes! It's also served cold, so you can make it in advance, and have it ready to go!

We’d obviously be remiss if we didn’t finish with dessert. Summertime can bring memories of roasting marshmallows over an open campfire. With this S’mores Galore recipe we take the classic s’more a step further and turn it into a big, gooey dessert dip! Cooked in a cast iron skillet, this can be cooked up right on the grill.
