Beer Can Chicken

  • 4 tsp chicken seasoning
  • 2 tsp sugar
  • 1 tsp chili powder 
  • 1.5 tsp paprika
  • 1 tsp dried basil
  • 1/4 teaspoon pepper
  • 3-4lb whole chicken
  • 1 tablespoon canola oil
  • 1 can beer (this will add some flavor to the chicken so make sure its a beer you like!).
  1. Preheat grill.
  2. In a small bowl, mix chicken seasoning, sugar, chili powder, paprika, basil, and pepper together.
  3. Gently loosen skin from the chicken. Brush chicken with oil. Sprinkle 1 teaspoon spice mixture into cavity.
  4. Rub the remaining spice mixture all over the chicken (over and under the skin) & tuck the wing tips behind the back.
  5. Pour out (or drink!) half the beer. Poke additional holes in top of the can with a can opener. Holding the chicken with legs pointed down, lower chicken over the can so it fills the body cavity as pictured and place in a skillet (or grill safe drip pan). (We put our beer in a vertical roaster to make it easier to manage, which is nice for stability but not totally necessary).
  6. Place skillet or pan, with chicken in it on the grill, and close the lid. Cook over medium heat until chicken is cooked through (165-175 degrees on meat thermometer). About an hour to an hour-and-a-half.
  7.  Remove chicken from grill; cover and let stand for 10 minutes.
  8. Remove can from chicken & enjoy!
