Recipe: Cider Glazed Pork Tenderloin

What You’ll Need:

  • 1 pork tenderloin (~1 pound)
  • 1/4tsp salt
  • 1/2tsp pepper, divided
  • 1Tbsp olive oil
  • 3/4C apple cider or juice
  • 1/4C maple syrup
  • 2 Tbsp apple cider vinegar

How you'll do it:

  1. Preheat oven to 425°. 
  2. Cut pork in half to fit in a skillet; sprinkle with salt and 1/4 teaspoon pepper. 
  3. In a large skillet, heat oil over medium-high heat; add pork to brown pork on all sides. 
  4. Transfer to a roasting pan or dish until a thermometer reads 145°, 12-15 minutes.
  5. While pork roasts, in same skillet, bring cider, syrup, vinegar and remaining pepper to a boil, stirring to loosen browned bits from pan. Cook, uncovered, until mixture is reduced to a glaze consistency, about 5 minutes.
  6. Remove pork from oven; let stand 5 minutes before slicing. Serve with glaze.
