New Meal Monday: Strawberry Ice Cream
While strawberry season here in Vermont is officially winding down, there's still plenty of fresh, locally grown strawberries around! So we thought we'd take advantage and went to the closest farm stand to our house and picked up their some freshest strawberries. It's been hot lately so we thought a cool treat was in order. Furthermore, our daughter (almost 2) has somewhat recently discovered her love for ice cream, (and we though we might be able to trick our picky eater into eating some more fruit...whatever it takes!)
We wanted something pretty simple so that the taste of the fresh berries would really stand out, and we actual found this recipe in the instruction booklet of our Cuisinart Ice Cream Maker! It was easy to make and delicious! (Another fun option for making ice cream is the Zoku Ice Cream Maker which would work with the same mixture, but let everyone mix their own serving, by stirring for 10-15 min in step 5 below!)
What you'll need:
- 1.5 Cups Fresh Strawberries (hulled)
- 3/4 Cup Whole Milk
- 2/3 Cup Granulated Sugar
- pinch of salt
- 1.5 Cups Heavy Cream
- 1.5 tsp pure vanilla extract
How you'll do it:
- Using a food processor, chop strawberries until chopped to your liking. (Chopped a little coarsely if you'd like chunks of strawberry in your ice cream, chopped more finely if you'd like to have less/no chunks!) Set aside
- In a separate bowl, whisk together milk, sugar and salt until sugar is dissolved.
- Stir in heavy cream and vanilla
- Stir in chopped strawberries and any additional juices. Cover bowl and refrigerate minimum of 2 hours.
- Using ice cream maker of your choice, blend mixture accordingly. (likely about 15-20 min or until desired texture). Freeze additional 2 hours if you you'd like even firmer texture, or enjoy now!
