New Meal Monday: Snickerdoodles

I was fortunate to grow up in a household with a mother who loved to bake. There was never a holiday or special occasion that was not accompanied by a multitude of homemade treats, which is still true to this day! So not only did I develop quite a sweet tooth (thanks Mom!), but I also developed a love of baking. I became my mother’s helper in the kitchen, assisting with the creation of pies, cookies, candies and cakes. And my favorite time of year to do this was the holidays, where the output of desserts increased dramatically.  To me this meant snowy afternoons in the kitchen with my mom, holiday music and hot cocoa - some of my fondest memories growing up. I learned how to measure flour, beat an egg and how to get sugar cookie batter to just the right thickness.  But I also learned how valuable that time with my mom was, and how important it is to me that I create a similar experience for my daughter.  To find something that I enjoy and share it with her.  So as we set up our Christmas tree and decorated our house, it was not surprising that I got an urge to bake.  I turned up the holiday tunes, made a little cocoa and propped my 3 month old daughter on the counter for her first of many mother-daughter baking sessions.  She may not be much of an assistant right now, but she certainly enjoyed watching me dance around the kitchen!

The recipe below is for snickerdoodles, a staple in my house growing up as it was one of the few cookies my siblings and I would all eat. It’s a basic, easy to follow recipe that is sure to fill your kitchen with the sweetest smells. I added red and green sprinkles to give these cookies a little holiday flare. Hope you enjoy these tasty treats as much as I do!

Here is what you’ll need:

  • 1/2 cup butter
  • ¾ cup sugar
  • 1 egg
  • 1 ¼ cup flour
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • Coating mixture: 1 teaspoon cinnamon and 2 teaspoons sugar (add sprinkles of your choosing if you’d like a little color)

    Here’s how you do it:
  1. Preheat oven to 350 F.
  2. Cream butter and sugar. Add egg and mix well. In separate bowl, sift dry ingredients together. Then add to butter mixture.
  3. Chill dough for 30-60 minutes. Then roll into 1 inch balls. Roll each ball in coating mixture and place on baking sheet (do not grease).
    *If you are adding sprinkles, add it right into the coating mixture. I split the mixture in half and added red to one bowl and green to the other.
  4. Bake for 8-10 minutes.
