New Meal Monday: Halloween Candy Apple Pops

October 30, 2017

Candy apples have always been a treat I love in theory, yet whenever I eat them I end up taking a few bites before it's a sticky mess that I am unable to finish. This doesn't always deter me from trying (a caramel-ly, chocolate-ly mess is a mess I can tolerate), yet I wanted to try something new this year that might be more manageable to eat, without losing the tastiness. These candy apple pops have all the fun, yummy aspects of a full candy apple, but from a consumption perspective, they are much easier to enjoy! Not to mention, the chocolate-to-apple ration increases in each bite, which was reason enough for me to give these a try. When it comes to decorating, it opens up a whole new world of possibilities for creative designs as you have a flat surface to with instead of round sides of an apple. I stuck with just a few designs (the spider web and candy corn face) but the options are endless and would be a great activity with friends and family to see who can design to most creative pop! I recommend adding some crushed candy pieces, chopped nuts, or caramel drizzle to really make these pops you own. Enjoy and Happy Halloween!

Here's what you need:

  • 2 large apples
  • 2 cups semi sweet chocolate chips (or other melting chocolate)
  • 1/2 cup white chocolate chips
  • Candy corn
  • Wooden or plastic skewers

Here's how you do it:

  1. Slice apples in 1/2 inch slices - full circles, you get about 6 slices per apple. Pierce each slice with wooden skewer so slices form into a popsicle.
  2. Melt chocolate (1 recommend melting 1 cup of chips at a time so you are working with less chocolate at one time, melt additional chocolate as needed) Follow directions on package for melting.
  3. Line a baking sheet with parchment or wax paper. Dunk slices in chocolate, or use a spoon to pour over each slice. Evenly distribute the chocolate all around the slice and place on covered baking sheet.
  4. Decorate as you wish! Here are some Halloween suggestions:
    1.  Spider web: Melt white chocolate - pour in small bag with a small hole at bottom. Drizzle chocolate on slice in a spiral. Then take a toothpick and place in center and drag lines out to edge to give the spiral a ripple effect.
    2. Candy corn face: use full candy corn piece for each eye, angling down and towards center for ‘angry’ expression. Break off the white tips to make teeth, and then break off the yellow bottom for a nose.
    3. Top with a variety of candy pieces
*For a non-Halloween treat, I suggest drizzled caramel and chopped pecans!
  5. Place decorated pops in the fridge to cool for at least 1 hour
