While it's not quite summer yet, Memorial Day in my mind marks the unofficial start of summer. Whether it's lawn games at a backyard BBQ, picnics or hanging by a campfire - it's a time to enjoy the outdoors with family and friends. In our family, this means (mildly) competitive lawn games and a meal centered around the grill. However, I really know it's summer once I've had my first s'more. A staple of my childhood, s'mores instantly make me feel like a kid as my perfectly toasted marshmallow oozes out from between melting chocolate and crispy graham cracker! The problem is that we don't have a fire pit so my s'more days have been too few and far between. This year I was not going to let the lack of open fire deter me and with some inspiration from other recipes, we created what I call S'mores Galore. Made in a cast iron skillet on our grill, this tasty concoction really takes s'mores to a whole new level. This dessert is more of a shared experience, and is good for a group as it serves almost more like a dip! Be cautious of the hot skillet, you may want to serve into bowls if small children will be enjoying this treat!
Here's what you need: (Quantities are based on a 10'' skillet, adjust quantities based on size of skillet and preferred taste)
- 1 box graham crackers
- 5-6 Hershey chocolate bars
- 8-10 oz mini marshmallows (about 1 bag)
- 10-12 Reese's miniature cups
Here's how you do it:
- Crush 6-8 graham crackers and line bottom of cast iron skillet.
- Cover with chocolate bars (I found it best to break them up so they can easily be spread out). Add in miniature Reese's cups - for more peanut butter flavor, add more. Top with marshmallows.
- Grill for about 10 minutes. Grilling tip: Turn one burner on high, place the skillet on the other burner and close the lid. This will help prevent the bottom from and still allow the marshmallows to brown nicely on top!
- Remove from grill and serve with broken up graham crackers for dipping.
