New Meal Monday: Slow Cooker Cocktail Meatballs

This time of year is a great time for gathering with family and loved ones.  Whenever we’re attending a gathering or party we always want to be able to bring a dish or something everyone can enjoy.  However, spending a lot of time in the kitchen preparing something for a large group is also at odds with our other urge this time of year; which is to rest and relax!  So the goal for us is typically to find something that people will enjoy, that also takes the absolute minimum amount of effort.  One great option for this we made this past week is the Cheddar Black Bean Spirals we wrote about previously.   Another great option is this recipe for slow cooker cocktail meatballs!  Everything in this recipe is pre-made, making it simple and easy. It makes about 80 small meatballs and every time we bring it to a party, they go fast.
So here’s how you can prepare an appetizer for a crowd while reading a book by the fireplace.

What you’ll need:

  • 1 can jellied cranberry sauce
  • 1 bottle chili sauce
  • ¼ Cup brown sugar
  • 2 teaspoons lemon juice
  • 80 frozen small meatballs

How you do it:

  1. Put all ingredients in slow cooker.
  2. Cook on low for 5 hours.
  3. Serve, enjoy, and tell everyone stories about how you spent all day cooking.
