The mornings are getting cooler, and the summer is definitely winding down, so we thought a seafood-on-the-grill recipe might help you cling to summer a little bit longer! Everyone has there own preferences, but I like my scallops to be seasoned very simply. I've had some delicious dishes with scallops in heavy, flavorful sauces, but personally I like to just keep it simple and enjoy the taste of the scallop! The below recipe serves about 6 (about 1/3 lb per serving). You can serve with any sides you like best, but for this time of year, I'd go with some corn on the cob and garden salad (we're clinging to summer remember?). Don't forget, scallops can be delicate, so if it feels like you didn't cook them very long, they're probably just right!
What you'll need:
- 2lbs Scallops
- 1 clove garlic, minced
- 3 Tbsp seasoned salt
- 2/3 Cup olive oil
- 1/4 Cup melted butter
- 3 Tbsp fresh squeezed lemon juice
How you'll do it:
- Combine ingredients in large re-sealable bag. Toss to mix well and let marinade 5-10 min. (Or toss in a bowl or dish cover and marinade scallops 5 min per side.
- Grill scallops over medium-high heat for 5-6 min flipping once halfway through.
- Enjoy! (Simple enough right?)
