New Meal Monday: Rhubarb Crisp

Today's post marks a new unplanned annual tradition for our New Meal Monday's blog posts. It is our 3rd installment of "My mother-in-law has a bunch of rhubarb in her garden, so let's make something with rhubarb"!  Last year we made Rhubarb Coffee Cake  and two summers ago we made Strawberry Rhubarb Muffins.  So this year, we made an family recipe for Rhubarb Crisp.  It served as our Father's Day dessert, and served with scoop of ice cream, it make a tasty treat! 

 

What you'll need:

  • 3 Cups chopped rhubarb
  • 1 Cup sugar
  • 3/4 Cup Rolled oats
  • 1 tsp flour
  • 1 tsp cinnamon
  • 3/4 Cup brown sugar

topping:

  • 3/4 Cup Flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/3 Cup softened butter

How you'll do it:

  1. Preheat oven to 350F and lightly grease a 9"x13" baking dish.
  2. In a bowl combine, rhubarb, sugar, oats, 1 tsp flour, cinnamon, and brown sugar and mix well and pour into baking dish.
  3. Separately mix remaining flour, baking soda, and salt, then blend in butter until well combined, then pour on top of mixture in baking dish.
  4. Bake for 30 min or until rhubarb is tender and enjoy!
