New Meal Monday: Irish Nachos

Last year, we wrote about how seriously take St. Patrick's in my family.  So this year, we thought we would again make something in honor of St Patrick's day this coming Saturday.  We thought, rather than make a traditional Irish meal, we'd make a dish that we'd give a bit of an Irish flair.
Several years ago we had "Irish Nachos" at a restaurant and have been intending to make our own version ever since. Obviously when you think of traditional nachos, they don't exactly make you think of Ireland.  So what's the difference, between Irish nachos and regular nachos? Well, first step, sub out chips and bring in potatoes.  It's more than just a stereotype, potatoes are an essential Irish ingredient!  From there, we add some thyme and rosemary, and top with cheddar, Canadian bacon, chives & parsley, and you have yourself a hearty and delicious dish to share with friends while enjoying a Guinness!  We used Canadian bacon for these, because it's quick and easy to cook up, but if we have left over Corned Beef after dinner on Saturday, we'll be making these again and topping with that instead!

What you'll need:

  • 1.5lbs russet potatoes 
  • 2 minced green onions
  • 1 Tbsp chopped parsley leaves
  • 2 Tbsp olive oil
  • 1/2 tsp dried crushed rosemary leaves
  • 1/2 tsp dried crushed thyme leaves
  • sea salt
  • ground black pepper 
  • 1.5C shredded sharp cheddar cheese
  • 5pcs Canadian Bacon, cooked

How you'll do it:

  1. Preheat oven to 450 degrees.
  2. Wash potatoes and pat dry. Slice potatoes into 1/4 inch rounds (we'd recommend using a mandolin slicer) and place slices in a large bowl.
  3. Drizzle olive oil, rosemary, and thyme over potatoes. Mix till well combined.
  4. Place potatoes, in a single layer, on a baking sheet. Bake for 20 minutes, turn over, and continue baking for an additional 20 minutes.
  5. Remove potatoes from baking sheet and place on a flat-sided cast iron skillet, slightly overlapping the edges.
  6. Sprinkle with cheese and return to the oven for 3 to 4 minutes, or until cheese is completely melted.
  7. Sprinkle with bacon (or corned beef!) green onions and parsley.
  8. Top with condiment of your choosing. I liked salsa, my wife liked ketchup. Sour cream and guacamole would be good options too!
