In my adult life I have often boasted about my strong immune system, and have even uttered the words "I just don't seem to get sick that often...". Well, being the parent of a toddler has tested my confidence in my immune system and this winter our household has seemed to be in an epic cycle of 'pass the germs'. One of us gets healthy only to get knocked down by the next bug of the week. So this week I decided to try and find a recipe that would pack of healthy punch. Green smoothies have been on my list to make as I make fruit smoothies on a weekly basis, but most searches for green smoothies left me overwhelmed with the all the choices! So I took a weekend to test out a bunch of combinations and came up with my favorite below. It's got the greens, the fruits and I added avocado for an extra smooth consistency and peanut butter to give it just a hint of nutty flavor. So whether you are looking for a healthy boost, or a way to get greens after some Super Bowl indulgence (I am sure I am not the only one who ate a few too many fried, cheesy snacks...) I hope you enjoy this tasty glass of green goodness!
Here's what you'll need (serves 2):
- 2 cups spinach
- 1 cup kale
- 1 1/2 cups coconut water
- 1 banana
- 1 cup frozen mango
- 1/2 cup pineapple
- 1 tablespoon avocado
- 1 tablespoon peanut butter
