New Meal Monday: Energy Bites

As we've mentioned before, our "new meal Monday" posts aren't always necessarily meals; sometimes it'll be a meal, other times a side, or a snack.  The idea is to bring some sort of new recipe to start off every week.  This week we have an easy snack that's become a go-to in our household.

I am a snacker. Always have been and always will be. However, in an effort to avoid snacks that leave me hungry minutes later, I am constantly looking for nutritious and filling snacks. This became especially important the weeks after my daughter was born and as a nursing mother my appetite was insatiable. Healthy, quick snacks became a necessity. My sister, an experienced mother of three, introduced me to energy bites as an on-the-go snack that leaves you full and alleviates any guilt from extra snacks. Packed with protein, natural sugars and healthy oats I guarantee you’ll love them!

Here is what you’ll need:

  • I cup dry oats
  • ½ cup peanut butter (I use Teddy Super Chunky All Natural – lower sugar and I think it’s tastier!)
  • 1/3 cup honey
  • ½ cup flax seed
  • 2/3 cup coconut flakes
  • ½ cup choc chips
  • 1 teaspoon vanilla extract
  • 1 Tablespoon chia seeds

Here's how you do it:
Mix all together in a bowl and chill for at least an hour
Then roll into bite size balls and enjoy!


*I keep them in a sealed container in my fridge and enjoy them for weeks!
